Erratic Coolant Temp

Driving a few days ago and noticed the coolant temp ranging from 180-300 very erratically. I thought at first it was a bad thermostat so I replaced it with a fail safe. No change.
It seems to do this after the engine has warmed and run a while then shut down for a few minutes?
Is this a temp sensor?
If it is I'm finding that this engine is supposed to have two (1 for gauge and 1 for the ECM) but I can only find 1 under the throttle body.

Any ideas?
